Homebrewing - Brewing Beer in a Coffee Pot

So are you somewhat interested in home brewing but unsure whether you want to invest in a home brew kit? It was recently brought to my attention that you can brew your own beer at home using a coffee pot.

Necessary Equipment (nothing that you wouldn't normally find in the kitchen)
Coffee maker
Coffee filter
Wooden rolling pin
Saucepan larger than 2 quarts
2 1-quart canning jars with lids
cheesecloth
2 rubber bands
½ gallon of filtered water

Coffee Pot

Necessary Ingredients (can be bought at your local beer brewing retailer)
1 ¼ cups of malted barley
5-7 Hop pellets (compressed hops)
½ packet of champagne yeast (or baker's yeast)

If you are new to brewing, one of the most important things to remember is to keep everything sanitary. If any bacteria gets in your beer when you are brewing or bottling, it could ruin your entire batch. Brewing in a coffee pot is no different. Be clean.

First take your 1 ¼ cups of malted barley and crack the grain with your wooden rolling pin. Don't roll the grains too much; just make sure that all the grains are cracked. After cracking the grains, put them in the coffee pot. Pour two cups of water into the coffee maker and turn it on.

After about an hour the coffee maker will shut down. At this stage the "masking-in" process is complete. Strain the "mash" through a coffee filter. After straining, pour the liquid into the water-heating chamber of the coffee maker with one more cup of filtered water. Turn the coffee maker on again. When all the liquid empties into the coffee pot, take the liquid and put it back in the coffee maker with another cup of water. Repeat this step approximately 5 times, each time adding one cup of water.

After you have done this, pour the final liquid into a saucepan and boil. After boiling for 20 minutes, add the 5-7 hops pellets before boiling for another half hour. Remove from heat. Stir the liquid in the saucepan and pour it into a canning jar making sure not to splash. Immediately after you fill the jar, place it in a sink filled with ice.

After your wort, the expression for the beer at this stage, has cooled to about 65 degrees, put on the top to the jar and shake. Take off the lid, add yeast and stir. Next place cheesecloth over the jar's opening and secure with a rubber band. Do not place the lid back on the jar.

Place the jar in a dark place about room temperature; wait one week, and your beer should be ready. This is a good way to make smaller amounts of beer if you don't have a beer kit, but once you have mastered this, I strongly recommend investing in a homebrew kit. You will be able to make better tasting beer and much more of it at a time.

Antique coffee pots are not something that most people would consider for their modern kitchens. There are whole magazines devoted to kitchens with gleaming stainless steel appliances and all of the conveniences they offer. I had never even thought of giving let alone owning one of these treasures. If someone had suggested that I get one, I would have thought that if it couldn't brew my coffee at the touch of a button it would never grace my countertops. After my grandmother plied me with the obligatory homemade cookies and tea, I showed her the coffee pot. She perked up and took it from me with glee of a child receiving a birthday present. As she looked it over, she pointed out to me that the metal was actually silver and that the design of the pot dated back to the Victorian era. It had the mark of a well known London manufacturer called Goldsmiths Company of London. I couldn't believe it. I had come this close to throwing away a valuable treasure. One that was rich in history and certainly more worthy of display than my modern one. My grandmother got out some silver polish and cloths and cleaned it up. Looking at the transformed pot, I could now see why someone would want to own one. It was really beautiful.

I thanked my grandmother for teaching me the difference between value and cost. My wife and I were planning to redo our old kitchen with all of the modern appliances. My wife shook her head over the cost, but I had insisted. Now I'm going to find away to incorporate the old into the new. I can't wait to see her face when I start dragging her to antique dealers. Grandma will be so proud!

Coffee is 98% water. Often overlooked, the quality of the water is as important as the quality of the coffee. A good rule of thumb is that if your water doesn’t taste good from the tap, it won’t taste any better in your coffee. That’s why Cuisinart has added a water filter to the Brew Central coffeemaker. The charcoal water filter removes chlorine, bad tastes and odors, for the purest cup of coffee every time.

Element 2. Coffee:
While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a coffee bar, you need to use the same quality beans. Buy the beans fresh and whole, only about a two weeks’ supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If it is not practical to buy small supplies, we recommend you separate larger amounts of beans into one to two week portions immediately after purchase, and freeze them in airtight containers. The best way to maximize freshness is to minimize exposure to air, light and moisture. So, once removed from the freezer, beans should be maintained in a sealed container at room temperature, since damaging condensation occurs every time the beans are removed from the freezer or refrigerator. Note that some coffee experts advise against freezing dark-roast beans, because freezing can cause the oils to coagulate. Other experts disagree. We suggest you experiment and decide yourself.

Element 3. Grind:
The grind of the coffee is critical for proper flavor extraction. If the grind is too fine, over extraction and bitterness will result. Too fine a grind may also clog the filter. If the grind is too coarse, the water will pass through too quickly and the desired flavors will not be extracted. A medium-fine grind is recommended.

Element 4. Proportion:
The cups on the Cuisinart coffeemaker measure 5 ounces. Add the amount of ground coffee that corresponds to the number of cups being brewed. Many coffee bars and the Specialty Coffee Association of America recommend adding 2 rounded tablespoons of coffee per 6 ounces of water. Some coffee manufactures recommend using 1 tablespoon per cup. Cuisinart recommends using 1 tablespoon of ground coffee per cup, but use more or less to suit your taste. Note: the maximum capacity for ground coffee is 15 tablespoons for the 12-cup coffeemaker. Exceeding this amount may cause overflow if the coffee is too finely ground.

  8. The Auto On feature is used to program the start time of the brew cycle. The Auto On can be set for any time, day or night. The PM indicator is displayed on the LCD for nighttime program times. The Auto Off feature is used to shut off the coffeemaker at a preset time, anywhere from 0 to 4 hours. Note: To program the coffeemaker to shut off automatically, read the instructions included in the Instruction Manual under 'To program the Variable Auto Off'
    1. Heater Plate Control Knob: For controlling the temperature of the coffee after brewing. There are three temperature settings high, medium and low.
    2. 1-4 Cup Setting: The 1-4 cup setting button is used when you make small amounts of coffee. Normal coffeemakers will produce a colder batch of coffee when smaller amounts are made, because the heater doesn’t have enough time to properly ‘warm up’ to heat a small amount. The 1-4 setting basically ‘double heats’ the water, making your smaller amounts as piping hot as a full pot would be. To use simply press the 1-4 button on the control panel after turning on the unit.
    3. Retro-style flip switch is used to turn your coffeemaker on and off and works in tandem with the function knob.
  9. Clean Setting: Tells you when it’s time to clean your coffeemaker. Remove built-up calcification from the water reservoir, to help extend the life of your coffeemaker.
  10. Brew Pause: Stops flow of coffee from basket when carafe is removed (30 seconds max) from the heater plate, so a cup can be poured in mid-brew. Since the flavor extraction rate varies during the brew cycle, we recommend allowing the brewing cycle to finish before pouring the coffee. The coffee brewed at the beginning of the cycle has a flavor profile which is very different from the flavor at the end of the cycle. Once the coffee has finished brewing, stir it before serving to blend the flavors. The coffee at the bottom of the carafe will be somewhat stronger than the coffee at the top.
  11. Carafe: The easy pour, no drip glass carafe has an ergonomic handle and brewed coffee markings for two to twelve cups.

Coffee percolator is a coffee brewing device that looks like an urn. Coffee percolator, or caffettiera in Italian, may have gotten its name from the word percolate. The percolator was really the first device invented for brewing coffee. Today they are no longer commonly seen and were mostly replaced by drip coffee makers, espresso machines and French press.

Coffee percolators are a cruder way of brewing coffee. Most of the time it exposes the coffee grounds to higher temperatures compared to other brewing methods. This may cause the already brewed coffee to circulate again through the beans. Over extraction can make a coffee taste extra bitter and strong.

Coffee percolator may eliminate part of the volatile compound found in beans. This may result to a release of pleasant aroma during the brewing process but may produce a less flavorful cup of brewed coffee.

Coffee brewed using percolator has a quite distinctive flavor that some people consider as an acquired taste. The proper use of percolator takes a lot of talent so as not to ruin the taste of coffee. Place the percolator closest to a heat source such as stove or campfire. The temperature rises making the water in the chamber boil forcing the water up the tube. The hot water goes to the top through the perforated lid of the chamber. It then seeps through the grounds and leaves the chamber through the bottom, going back into the lower part of the percolator. The whole cycle repeats continually.

The overall temperature reaches boiling point while the brew continuously seeps through the grounds. The perking action or the spurting sound of the pot stops and the coffee is ready.

It is necessary for manual percolators to reduce the heat to avoid the coffee of having a bitter taste. Some percolators have a built-in electric heating element that automatically reduces the heat, keeping the coffee warm but not boiling.

Some manufacturers make electric percolators with advanced controls designed to possibly extract the best tasting coffee. It may need some experimentation in brewing the perfect coffee through the use of coffee percolator, so be patient and prepare on having aborted tries.

Making Turkish Coffee is a historical tradition in Turkish Culture. While there are many different Coffee Recipes available online, most are modified from the traditional version.

In this article, I will share a traditional way of making Turkish Coffee.

If you have the required tools in place, you are ready to start making Turkish Coffee.

Steps for Making Turkish Style Coffee

Grind coffee beans: If you want to make the most delicious Turkish Coffee, you need to grind the beans before the making process. This way, you will have fresh ground coffee and the oil in the beans will not dry due to waiting after grinding process. To be able to make authentic coffee, the Turkish way, you need Arabica Beans. If you can not find an authentic Turkish Coffee Brand near where you live, you should get a regular pack of Arabica Beans. Using an authentic Turkish Grinder is important. Because Turkish style coffee is ground extra fine, not like other types. Closest fineness to Turkish type of coffee is espresso. Even espresso is not ground as fine as Turkish. If you are in a hurry, and want to save some time, you need to buy ground coffee and pass this step. But if you are not in a rush, you should start with grinding beans to make the freshest coffee, Turkish way. After you are done with grinding the beans, remove them from the manual grinder and move to step two. Add ingredients into the coffee pot Use a Turkish style coffee cup, also called as Fincan in Turkish to measure water first. For one cup of coffee, you need to prepare one cup of regular drinking water into the coffee pot. After you add the water, add two teaspoons of ground coffee. Two teaspoons weigh around 0.175 ounces or 5 grams. So, measure if you are not sure how much coffee to put. Adding sugar is optional. Turkish way of coffee is made in three different ways. With sugar (means Sekerli in Turkish), medium sugar (means Orta Sekerli), and without sugar (meaning Sade). You should put around 1 to 2 teaspoons of sugar maximum. If you want medium, try with one teaspoon of sugar or less. If you make it without any sugar, it might taste little bitter, but for strong coffee lovers, this might be a great taste. So, choose your preference, and add sugar if you like. Heat & brew the coffee Start stirring with your teaspoon on a very low flame stove. Never use high flame, you should heat and stir slowly. Some recipes will tell you to add sugar or coffee, or both after heating the water. You should ignore this advice. Authentic Turkish style coffee is made by putting water, coffee and sugar simultaneously and by heating at the same time. While heating and stirring, you shouldn't step away from the process. It can boil very quickly and it might overflow fast. Making Turkish Style Coffee usually takes 5 to 10 minutes, so you should be patient and keep stirring. Right before it starts boiling, use your teaspoon to take some of the foam at the top of the pot and add them into the cups. This is an important step. Quality Turkish Style Coffee should be served with as much foam on it as possible. So, remember to add some of the foam to the cups before it boils. After coffee starts boiling, take away the pot from the stove, let it wait for a few seconds and put it on the stove again. You should repeat this process two to three times. Then, pour it into coffee cups.

While making Turkish Coffee, you do not filter the coffee. These small ground particles will sit at the bottom of the cup. After pouring the coffee from the Turkish Pot into the cups, you will also see some of these ground particles will stay in the coffee pot. This is normal, you shouldn't try to put these into the cup.

Making Turkish Coffee takes 10 to 15 minutes, but it is an enjoyable process and good for improving your patience. I hope you will try this authentic way of making Turkish Style Coffee.

Clean Filtered Water

The water you use for your coffee will affect the taste more than anything. Coffee is 99% water so use clean filtered or bottled water free from chlorine and other minerals that will affect the taste of your coffee.

Using stainless steel or gold mesh filters instead of paper filters will also make your coffee taste better. Paper filters release dyes, chlorine and bleach that affect taste. If you insist on using paper filters buy the unbleached, brown paper filters.

Use Fresh Quality Coffee

Quality coffee costs more but will consistently produce better tasting coffee.

For the best results use quality, whole bean coffee and grind the coffee beans just prior to use. You might think it's an inconvenience compared to ground coffee, but once you taste the difference you'll never go back.

If you still want to use ground coffee, make sure you use a good, drip grind coffee.

Use 2 level tablespoons of coffee per 6 ounces of water. This can be adjusted for individual taste preference. Make sure to spread the grounds evenly in the coffee filter so full brewing is achieved.

Drink your fresh coffee right away for the best flavor. Coffee will break down quickly if left on a heat source. Coffee should never be reheated or microwaved.

A clean, preheated air pot or stainless steel Thermos will keep coffee hot for about an hour without hurting the flavor.

A good rule of thumb is that if your water doesn’t taste good from the tap, it won’t taste any better in your coffee. That’s why Cuisinart has added a water filter to the Brew Central coffeemaker. The charcoal water filter removes chlorine, bad tastes and odors, for the purest cup of coffee every time.

Element 2. Coffee:
While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a coffee bar, you need to use the same quality beans. Buy the beans fresh and whole, only about a two weeks’ supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If it is not practical to buy small supplies, we recommend you separate larger amounts of beans into one to two week portions immediately after purchase, and freeze them in airtight containers. The best way to maximize freshness is to minimize exposure to air, light and moisture. So, once removed from the freezer, beans should be maintained in a sealed container at room temperature, since damaging condensation occurs every time the beans are removed from the freezer or refrigerator. Note that some coffee experts advise against freezing dark-roast beans, because freezing can cause the oils to coagulate. Other experts disagree. We suggest you experiment and decide yourself.

Element 3. Grind:
The grind of the coffee is critical for proper flavor extraction. If the grind is too fine, over extraction and bitterness will result. Too fine a grind may also clog the filter. If the grind is too coarse, the water will pass through too quickly and the desired flavors will not be extracted. A medium-fine grind is recommended.

Element 4. Proportion:
The cups on the Cuisinart coffeemaker measure 5 ounces. Add the amount of ground coffee that corresponds to the number of cups being brewed. Many coffee bars and the Specialty Coffee Association of America recommend adding 2 rounded tablespoons of coffee per 6 ounces of water. Some coffee manufactures recommend using 1 tablespoon per cup. Cuisinart recommends using 1 tablespoon of ground coffee per cup, but use more or less to suit your taste. Note: the maximum capacity for ground coffee is 15 tablespoons for the 12-cup coffeemaker. Exceeding this amount may cause overflow if the coffee is too finely ground.

  2. Water Reservoir: When filling the coffeemaker with water, refer to the carafe height markings and fill to the desired number of cups. Be sure to add a small amount of extra water to account for the amount of water lost in wetting the grounds and lost as steam during the brewing process.

  5. Filter Basket: Holds a #4 paper filter or a permanent filter.
  6. LCD Digital Clock: Displays the time of day and set time for automatic functions.
  7. Function Knob and Flip Switch: Used to initiate programming of automatic functions.
  8. The Auto On feature is used to program the start time of the brew cycle. The Auto On can be set for any time, day or night. The PM indicator is displayed on the LCD for nighttime program times. The Auto Off feature is used to shut off the coffeemaker at a preset time, anywhere from 0 to 4 hours. Note: To program the coffeemaker to shut off automatically, read the instructions included in the Instruction Manual under 'To program the Variable Auto Off'
    1. Heater Plate Control Knob: For controlling the temperature of the coffee after brewing. There are three temperature settings high, medium and low.
    2. 1-4 Cup Setting: The 1-4 cup setting button is used when you make small amounts of coffee. Normal coffeemakers will produce a colder batch of coffee when smaller amounts are made, because the heater doesn’t have enough time to properly ‘warm up’ to heat a small amount. The 1-4 setting basically ‘double heats’ the water, making your smaller amounts as piping hot as a full pot would be. To use simply press the 1-4 button on the control panel after turning on the unit.
    3. Retro-style flip switch is used to turn your coffeemaker on and off and works in tandem with the function knob.
  9. Clean Setting: Tells you when it’s time to clean your coffeemaker. Remove built-up calcification from the water reservoir, to help extend the life of your coffeemaker.
  10. Brew Pause: Stops flow of coffee from basket when carafe is removed (30 seconds max) from the heater plate, so a cup can be poured in mid-brew. Since the flavor extraction rate varies during the brew cycle, we recommend allowing the brewing cycle to finish before pouring the coffee. The coffee brewed at the beginning of the cycle has a flavor profile which is very different from the flavor at the end of the cycle. Once the coffee has finished brewing, stir it before serving to blend the flavors. The coffee at the bottom of the carafe will be somewhat stronger than the coffee at the top.
  11. Carafe: The easy pour, no drip glass carafe has an ergonomic handle and brewed coffee markings for two to twelve cups.
  12. Heating Plate: Scratch resistant with black, nonstick coating.
  13. Ready Tone: Signals the end of the brew cycle with five beeps (coffee will continue to stream from the filter for a few seconds after the tone).

Coffee makers date back to the Turks in 575 A.D. It wasn't until 1818 that the first coffee percolator was made. This coffee pot is also called the cowboy pot because many cowboys began using it. From 1835 to 1850, coffee makers saturated the market. Pressure steamers, glass balloons, grinders, and roasters all became available.

In 1890, the Manning-Bowman Percolator began being distributed in the United States. These percolators were linen with a cloth that had to be washed after each use. A paper filter was introduced in 1912. This made making and cleaning up of coffee much easier, and it increased in popularity. It wasn't until 1960 that coffee pots with disposable filters began being used commercially.

The coffee maker industry hit it big in 1972, with the Mr. Coffee automatic drip process and disposable filter. Mr. Coffee is still the biggest selling coffee maker in the world. Mr. Coffee came out with a maker than used less coffee grounds, yet had the same great taste. The design stayed the same until 1979 when a timer was added. Now people could conveniently set their coffee to start brewing at a certain time each day.

Mr. Coffee added additional products to the popular coffee maker. 1989 was the introduction of the maker that only makes 4 cups in a pot. This was at the demand of people who consumed small amounts of coffee, but still wanted it to be fresh. The same year, Mr. Coffee introduced the first ice tea maker. Mrs. Tea followed suite in 1995, similar to Mr. Coffee, only for hot tea.
